I think the airport will take it off you and store in lost luggage. (I know Oslo and Tromsø did last year did). Go to the service center (lost luggage) once you have picked up and assembled you bike.

You can even jump on a local ferry and cross the Fjord without stopping in Gudvangen. It’s a lot cheaper. There are many around the popular fjords like Hardanger and Sognefjord. Usually July, August, & September (harvest time) are when the fresh fruit is sold (cherries, raspberries, strawberries, pears, apples, and pineapples). That last one was a lie. But as Gjermund rightly mentions bring cash unless you have access to Vipps Payment.
