We have Ortleib panniers on a touring MTB bike set up have never let us down, these can also be used on a Gravel bike they worked well on my Specialized Diverge. good luck with you adventure.

Has anyone flown from Lekselv after reaching Nordkapp? Are the planes big enough to take the bike ?

SAS fly there so the answer is yes. But the closest airport to Nordkapp is Honningsvåg (HVG) and that is serviced by https://www.wideroe.no/ – you can book bikes on their planes too.

Not sure how helpful my answer is (sorry if not), but if you bother to cycle to Alta, that should make things much more accessible (and cheaper?), as it has daily direct routes to Oslo.
