Moose will not bother you. As with all animals, they can be dangerous if you come between a mother and the offspring. If they are on opposite sides of the road/trail, stop and wait for them to move. Make some noise to make sure they know you are there, although they will probably notice you before you notice them.

Of course you can spend a night in a tent if it’s raining. You might encounter buildup of condensation inside your tent and on your gear. This can lead to your sleep system not performing as well as when dry. If that’s the case, consider booking a hotel room/cabin to dry off your gear. Your tent looks fine.

Have a look at this map to find shelters along your route https://www.google.com/maps/d/viewer?mid=1zqVpeAFh371N7jWLG8Gw9YMmAM-7vzPW&ll=62.53549572571022%2C17.97926260000002&z=3

I would bring a water filter. There are livestock and people around. I use a Katadyn befree.

I find it difficult to give any specific recommendations. It depends on budget, if you “sleep cold or hot” and if you are planning on sleeping up in the mountains. Up high you might encounter freezing temperatures, even in summer, but it’s unlikely. If you are camping in the lowlands. I would say 10 degrees C lows are what I would plan for.

A good sleeping mat goes a long way and doesn’t weigh/pack much. Exped Ultra 5R, Thermarest neoair and the like. Quilts are lighter/smaller than bags.

I agree with Michel. Trekking pole tents are great for hiking, if you already have your hiking poles. A free standing or semi free standing is better for biking.

That being said, I use my Durston xmid for both bikepacking and hiking. I have had issues with pitching in spots with very little top soil, but I made it work by gathering some rocks to hold the guy lines.

Any kind of tent will work, but free standing is just easier.

Beware that a lot of these unmanned farm stands will expect you to pay with the Vipps app. I guess exact change might be accepted.
