Rather than carry a trowel and dig holes when you need to do your business why not carry a supply of (compostable) doggie poop bags? Take one bag and cut it along 3 sides and lay it open on the ground. This is your target and if you can hit a hole in the ground surely you can hit an open bag.
When you are done bundle it all up and bag it a time or two in another bag, pack it out and dispose of it the next chance you get. With the external bagging it should be odor-proof.
The bags are cheap, light, compostable and are also useful for waterproofing/windproofing your feet and hands.
